Crock Pot Chicken Tacos

This is a crock pot recipe that is quick and easy. Sometimes this comes out soupy and other times goopy. So if its soupy then serve it as soup with tortilla chips on the side. And if it's goopy, then serve it in a taco or tortilla shells.

Layer these ingredients, as listed,  in the crock pot and turn on low for 6-8 hours:
uncooked chicken breast
sprinkle with taco seasoning
can of cream of mushroom soup
can of green chilies
can of rotele brand tomatoes
After cooking:
Take chicken out and shred with fork
Add a can of corn - drained
Add a can of black beans - rinsed and drained
Stir to mix in corn and beans
Serve in tacos with shredded cheese, lettuce

  1. I cannot wait to try this one! I love tacos and this recipe sounds wonderful. Anything in the crock pot is a good recipe in my book--mostly because it means I can leave it alone for a few hours and come back to find a wonderful meal waiting for me.   3. Hummm...this sounds great! I love crock pot recipes, so I'm going to try this one. Julie, are these your own recipes, or are they a compliation of ones you've found/gotten from others?

    Do you have a family you prepare dinner for every evening? I am single, and do not have children, so it is just me to cook for every night. Honestly, that seems like it would be so simple, but it's hard for a few reasons. Mainly, unless you enjoy eating leftovers for days, many recipes are simply too much for one.

    Since I have been working at Chick-fil-A, in the corporate headquarters, they provide lunch daily (for FREE!!!). It's amazing and one of the great benefits of working there. The lunches are very nice, too. The salad bar is full of wonderful veggies that are interesting and unusual. They also have a variety of fruits and whole wheat options throughout the day for snacking, etc. Unfortunately, they also have frozen yogurt and their ice-dream freely available for the 3 o'clock slump. :-) I've been eating my "main" meal during the daytime and then just eating soup or cereal or something like that at night. My grocery bill is really going down, so that's good too!

    I'm going to print out these recipes though, for the times I cook for my boyfriend and our other friends. Thanks!!! :-)

    I don't have a family that I cook for, but lately it seems that I'm doing a lot of entertaining during the week. So, I am all about easy and fast. My partner of 12 years lives and works in Yellowstone Park, so we only see each other a couple of times a month. I completely understand the difficulties of cooking for yourself. All of the recipes that I post can be scaled back for two or increased to feed more. I am extremely envious of your free lunch-the salad bar sounds divine!!
